The plural of ninja is ninja, it depends on the context if it's plural or not, that's how Japanese works, so it's the same with katana, samurai, etc.

We could try to find some scripters to give your character new skills after training, i.e. being able to run on water for a few steps, or daggerfall-esque climbing. I do not know if this is possible, I am only familiar with morrowinds scripting.
On an unrelated note, It would be awesome if the knifeblossom ninja wore blackened Tsaesci scales as armor.
