A middle eastern theme sounds like a good start. I looked around for some examples and dug up the ones I thought may be good examples. I'll post some links and get the images up in a little while. There's some great stuff that would only require a slight modification to fit right into Tamriel.
Note: Some of these links are not only images, but articles and/or text as well. I posted the links based on the images found on the site. Just thought you should know.

For the architecture, I have thus far envisioned that the lwoer to middle class homes of the desert settlements will all hae sloped roofs, door frames that extrude from the building, and some form of risen blocks protruding along the building, to picture it, think of a drainage pipe built into the building that is rectangular and closed. In the cities, older, more sacred buildings will have a more pure islamic or egyptian look, walls will be made in egeyptian style, square colums and all. For major cities, we can have buildings that share walls with eachother ala the imperial cuty, basicly seperate enterances in a long wall that has a roof protruding forward supported by pillars, like a shopping strip. What do you all think?

Sorry but Hammerfell is the province that has a middle eastern theme to arcitecture, I pretty sure that Elslweyr's arcitecture is made from wood.

Those examples look good, we should make it so there are lots of alleyways and things like that so you can explore. If there are flat-roofed buildings make it so you can climb on to them.
EDIT: While I was slowly typing this message the previous post was posted.

The desert province is the wooden one? And Im certain that there is egeyptian influence there.

actually hammerfell is more of a desert province.

Maybe we should have some hints of egyptian and middle east influence in the architecture, but still make it unique.

Alright, I say we drop most of the islamic, take the general feel of egyptian and come up with some uniquely khajiit concepts, any one here who can draw, even just a little bit, get your ideas visualy on here. Right away, Im serious, we need visual resources to design a new style.

If I look in the Elder Scrolls Adventures: Redguard guide, I may be able to find something about Khajiit architecture. I'd have to find it first.

please do, I have th box for that game, but nothing else, gonna ask my friend for his copy.
EDIT: What about pueblo architecture?

Imagine that, with a more sturdy, egyptian feel
EDIT: It seems that teh khajiit only use wood in the palaces of the main, due to it's proximity to valenwood.
